甲鱼,鱼籽,生姜,大蒜,青线椒,大葱,白胡椒碎,盐,白酒,蚝油,鸡精,油,水。

做法:
买的时候,让老板帮忙把甲鱼宰杀好。回家后烧一锅清水,水开后放入甲鱼,煮一到两分钟。

取出煮好的甲鱼,撕掉甲鱼表面的膜儿,用清水把甲鱼肚子里的内脏和血块清洗干净,剁成小块。

锅内倒油,油热后倒入大葱圈、生姜片,炒香,放入洗干净的鱼籽煎。

煎到鱼籽表面定型、发黄,这时候取出鱼籽备用。(鱼籽煎过后可能会炸开,这个不用担心,炸开的鱼籽反而更容易入味。)

往锅内倒入一些葱姜蒜爆香,倒入甲鱼块翻炒,炒出香味后淋入一点白酒去腥。

加一点蚝油增鲜,加一点盐调味,炒匀后倒入一碗清水煮甲鱼。

待甲鱼肉煮到壳上面的裙边比较Q弹有韧性后,倒入鱼籽一起煮。

待鱼籽和甲鱼肉都煮熟后,大火收汁,倒入青线椒圈一起煮。

等到锅内汤汁不多时,加一点鸡精提鲜,炒匀就可以出锅了。

小贴士:
在清洗甲鱼的时候,一定要把表面的膜和内脏血块清洗干净。尽量摘去甲鱼肚子里面的肥油,这样可以大大减少甲鱼的腥味。
