材料:鸡腿 姜末 蒜泥 盐 五香粉 椒盐 生抽 中筋面粉 泡打粉
1.鸡腿清洗干净,浸泡半小时去除血水

2.鸡腿里加入蒜泥20克,姜末20克,盐7克,椒盐3克,五香粉2克,生抽20克,搅拌均匀,腌制2小时

3.碗中倒入中筋面粉40克,盐1克,椒盐3克,五香粉2克,泡打粉2克,水175克,搅拌均匀至面糊状

4.将面糊倒入腌制好的鸡腿里,搅拌均匀,让每根鸡腿都均匀的裹上一层面糊

5.鸡腿放入红薯淀粉里滚一滚

6.拍掉多余的红薯淀粉(过厚的干粉会导致鸡腿表皮很硬)

7.将过好的鸡腿上的淀粉反湿一下,这杨鸡腿下锅炸的时候才不会有很多的浮粉在油里

8.锅中热油,放一个小面团扔进锅里,看到小面周围有大气泡往上翻滚的时候,就可以放鸡腿啦

9.1分钟左右油温稳定了,转小火慢炸12分钟,出锅备用

10.再次将油温升高,扔进一个小面团,小面团的周围有密集的小气泡且快速上升的时候,将鸡腿放入锅中炸半分钟就可以了(复炸是让表皮酥脆不油腻的终极大招)
