炸回头,老北京回民小吃。名字由来一是说早年有个回民饭店经营不善,正欲关门。老板用仅有一点牛肉剁成馅,自己包了包子炸着吃,忽然来了一个客人,见到包子特别,尝过之后连连夸赞,并买回与朋友分享,一时名声大噪,众食客纷纷回头。另一个说法是与做法有关,需要把面扭转回头而成其型。

做法如下:
1,牛肉多成馅,拌入葱姜末,黄酱,耗油,花椒油,胡椒粉,香油,盐。包制前加入韭菜。
