鲤鱼宰杀好清洗干净,鱼背上改成花刀擦干水分备用

鱼身上拍一层玉米淀粉,使鱼的每个部位都裹上一层淀粉

锅里加入食用油,油温五成热下入鲤鱼调中火炸,炸至底面发黄把鱼翻过来炸另一面

锅留底油下入葱、姜、干辣椒、八角、花椒炒出香味

放入炸好的鱼,加入适量水,水的量没过鱼,放入适少许白酒、陈醋,适量盐、老抽、生抽、蚝油、适量白糖提鲜,盖上锅盖大火烧开调中小火炖30分钟即可
